We’ve been working hard on our personal family food revolution, trying to fit more whole foods into each meal, and smoothies are a great way to do just that. Since it’s getting close to Halloween, here’s a hauntingly great recipe packed with nutrients that got two thumbs up from my boys…well, after they were brave enough to try mom’s spooky concoction.
I was a little worried when the boys witnessed the spinach going into the blender. It wasn’t like I was trying to hide it. They love spinach, so why not give it a try? Next came the orange juice, followed by an “ewwww” from the boys. Yet, I perservered.
But, once I hit blend, and the spinach and juice started to whirl together, the boys exploded into a snorting-giggle-ewwww-fest. Oh, no. This isn’t going to be pretty.
Again, I continued on.
Tossed in a banana, a cup of pineapple. At this point, they were definitely entertained and just a little bit curious.
Finally, a cup of ice, one more big whirl, and our frothy smoothie was complete. Annnnndddddd….to my delight, two curious little monsters decided to try it.
Sip, sip, sip. “Hey mom, this is kinda like when they have to drink something gross on the Amazing Race…” Hmmm. O.K.
More sipping. Two empty glasses. “Hey mom, this is actually really good. Can we have some refills?” Success.
Big Green Monster Smoothies
Inspired by Green Plate Rule’s green smoothie.
1 cup spinach
1 cup orange juice
1 cup pineapple
2 cups of crushed ice
The trick is to get the spinach nice and pulverized, so start by blending just the spinach and orange juice first. Then, add the bananas, pineapple, and ice. Finally, blend well, and serve.
